Beef Stew

Another traditional family recipe, this basic stew from Better Homes & Gardens took on a new life while I was on chemo. It is hearty and substantial, a complete meal of protein, veggies, and starch, and goes down easily thanks to the savory tomato base.
Beef Stew
Serves 6.
Ingredients:
1.5 lb meat
1/2 c onion, chopped
1 clove garlic, minced
1 tbsp oil
1/2 tsp thyme
3 c tomato juice
1 tsp bullion (beef or chicken)
few dashes tabasco sauce
2 medium potatoes
1 1/2 c celery
1 1/2 c carrot
1 c water
salt and pepper to taste
1. In a large pot, cook the meat, onion, and garlic in oil until the meat is browned and the onion is tender.
2. Drain the fat from the meat mixture.
3. Add the remaining ingredients to the pot and bring to a boil.
4. Lower the heat and cover. Simmer until potatoes are done and meat is tender, at least 30 minutes.
Tips and Variations:
Pork may be substituted for beef; in this case the final simmering may require slightly less time.
Stew goes well served with Basic Biscuits.
V8 vegetable juice can be used for tomato juice.
