Pizza Party! Pesto Salmon Feta Edition

Who doesn't love pizza? There's something about pizza that's too fun to resist - maybe it's the warm bready aroma of the crust, or the wonderful consistency of melted cheese. Thanks to convenient pre-made crusts, it's quick and easy to put together a pizza that suits your tastes on any given night. Plus, the leftover store well and make for an easy meal or snack the next day. This particular combination of flavors is one that a dear friend of mine made for me during one of our movie nights while I was on chemo. (In addition to promoting the recipe she made, I can't over-emphasize how much good company makes it easier to get through meals while on chemo.)
Pesto Salmon Feta Pizza
Ingredients:
1 premade pizza crust
premade pesto sauce
smoked salmon
green onion, chopped
feta cheese
mozzarella cheese
1. Spread a layer of pesto sauce on the pizza crust.
2. Layer salmon, green onion, feta, and mozzarella on top in desired quantities.
3. Bake according to directions for the pizza crust, or until cheese is as melty as desired.
Tips and Variations:
Experiment with different sea salts to create subtly different creations.
