Pineapple-Mustard Sauce

Putting a tropical twist on traditional honey-mustard sauce, this recipe can be used to dress up just about anything - ham, chicken, rice, oatmeal, yogurt, cottage cheese, you name it! It could even be tossed with fresh or canned fruit (according to your restrictions) in a fruit salad. In the quantities listed below, the mustard is very mild, adding only a hint of flavor. Pineapple-Mustard Sauce
Ingredients:
8 oz fresh pineapple, chopped
1/2 c brown sugar
1/2 tbsp cornstarch
1/8 tsp salt
1 tbsp lemon juice
1/2 tbsp mustard (choose your favorite variety)
1. Combine brown sugar, cornstarch, and salt in a small saucepan.
2. Add pineapple, lemon juice, and mustard. Stir to combine.
3. Bring to a boil over medium heat. Maintain at a simmer or low boil and stir frequently until sauce has thickened. This may take about 30 minutes.
4. Recipe produced about 1 c.
Tips & Variations
If using canned pineapple, include the juices in the sauce.
