Cinnamon Sugar Sweet Potatoes

There is just something about sweet potatoes that always sounds good to me, on chemo or off. Maybe it's the sweetness, maybe the starchiness - whatever it is, it works! Even better is the fact that sweet potatoes are extremely versatile and can be served sweet or savory, with just about any herb, spice, or sauce, in chunks, fries, or mashed. The recipe below is just one suggestion for how to serve sweet potatoes, and is intentionally vague. The amount you want to prepare, as well as the amount of cinnamon and sugar you add to the potatoes, should depend upon your tastes for the day.
Cinnamon Sugar Sweet Potatoes
Prep time: < 20 min, for 1-2 potatoes
Bake time: 30 min
Ingredients:
sweet potato, peeled and cubed
olive oil
sugar (brown or white, as you prefer)
cinnamon
salt
1. Heat oven to 450F.
2. Toss cubed sweet potato in a bowl with olive oil, just enough to coat the potato.
3. Sprinkle sugar, cinnamon, and just a dash of salt over sweet potato, toss to coat.
4. Grease baking sheet with olive oil, butter, or other preferred product. Spread sweet potato cubes on baking sheet in a single layer.
5. Bake sweet potatoes for 15 minutes. Remove from oven and turn cubes over for even cooking. Return sheet to oven for another 15 minutes.
Tips & Variations
Sweet potatoes generally keep quite well if stored in a cool, dry locations, so keep a couple on hand to be used on short notice.
If not sweet or strong enough, sprinkle additional cinnamon or sugar over potatoes to taste after baking.
For a slight tang, sprinkle lemon juice over potatoes after baking.
