Fig and Onion Spread

This spread takes a little bit of time, but is simple and easy to prepare and definitely worth the effort. Best served on crackers, this spread is savory and tangy with just a hint of sweetness. The vinegar gives a clean, sharp edge to the recipe while the caramelized onions provide a rich, satisfying flavor. Thanks to allrecipes use Thea McAbbott for sharing the original recipe.

Fig and Onion Spread

Ingredients:

  • 1/4 c olive oil

  • 1 medium or large red onion, chopped finely

  • 2 c fresh Black Mission figs, chopped

  • 1/4 c aged balsamic vinegar

  • white sugar to taste

1. Heat the olive oil in a small saucepan. When hot, stir in onion. Cover and cook over medium-low heat for about 20-25 min, stirring periodically until onion is soft and caramelized.

2. Add chopped figs to onion mixture and cook for about 10-15 min. Figs should have lost their shape and the skins should disintegrate under the edge of a wooden spoon.

3. Add balsamic vinegar to saucepan. Cook until all liquid has evaporated.

4. Taste spread and season with sugar as desired.

5. Serve warm or cold with crackers.

Tips & Variations

  • I found that no sugar was needed, so do taste test before adding any.

  • If you are experiencing sensitivity to acidic foods, try starting with 2 tbsp of vinegar and taste test, then add more as desired.
