Tuesday Treats: Chocolate Rice Krispies with a Kick

After last week's post on the original, plain Rice Krispies treat, I was inspired to look for variations on the recipe that had features which might tickle the ol' chemo tongue. This particular version may catch your attention thanks to a healthy dose of cayenne. My whole life I've avoided spicy things, but even I enjoyed this recipe - there's a moment of surprise when the heat kicks in after a few chews, then it dies away fairly quickly without any extended burning. I have not been able to test this on any chemo patients (yet), so please post feedback on whether this variation works for you! (Thanks to Week of Menus for their creative recipe!)

Chocolate Rice Krispies with a Kick

Ingredients:

  • 3 tbsp butter

  • 1 10 oz bag marshmallows

  • 1 1/2 tsp cinnamon

  • 3/8 tsp cayenne pepper

  • 2 1/2 tbsp unsweetened cocoa powder

  • 6 c Rice Krispies

  1. Grease a 9"x13" pan.

  2. Melt butter in a large saucepan over low heat.

  3. Add marshmallows and stir until melted.

  4. Add cinnamon, cayenne, and cocoa powder. Stir until fully combined.

  5. Remove mixture from heat and add Rice Krispies. Stir until well coated.

  6. Press mixture into greased pan. If necessary, grease your hands or spatula to keep from sticking as you transfer the mixture.

  7. Allow to cool completely, then cut into 2" squares.
