Citrus Vinaigrette

This easy-to-make dressing could be used as a sauce over just about anything, adding a flavorful punch and taking advantage of the tang of citrus and the kick of mustard to get your mouth watering. (Recipe adapted from cookbook nom nom paleo: Food for Humans by Michelle Tam and Henry Fong.)

Citrus Vinaigrette
Ingredients:
1/2 c olive oil
2 tbsp lemon juice
6 tbsp orange juice
1 tsp mustard
1 tsp salt
black pepper to taste
Whisk all ingredients together.
Serve over salad, fruit, meat, etc. Refrigerate if storing.
Tips & Variations:
Any combination of citrus juices can be used, just be sure they add up to at least 1/2 cup.
Although it will keep, if let sit too long in the refrigerator, some of the oil will separate out, leaving a thicker layer underneath. This layer seems to be a good texture for dipping, so if you want a dipping sauce try reducing the amount of olive oil used in the first place.
